Spiced Potato Wedges

Autumn is the perfect time to dig up main crop potatoes and turn them into delicious dishes. This spiced potato wedges recipe is a tasty side dish for burgers, sandwiches or grilled meats. For extra flavour, it comes with a unique mayonnaise dip to elevate those taste buds.

Prep time: 15 minutes

Cook time: 1 hour

Recipe serves: 4

Ingredients for spiced potatoes wedges

4x Large potatoes (approx 800g)
50ml Olive oil
1sp Smoked paprika
1tsp Oregano
1tsp Onion powder
Pinch of sea salt

Ingredients for dip

Mayonnaise
Crushed garlic
Saffron

The method

1. Cut the potatoes into wedges and mix with olive oil, paprika, oregano, onion powder and sea salt.

2. Cook the wedges in the oven at 160 degrees for approximately 1 hour until golden brown.

3. Whilst in the oven, mix the garlic and saffron with the mayonnaise.

4. Once the wedges are done, serve them alongside the dip. 

 Enjoy!
