Sticky Toffee Bramley Apple Pudding

This sticky toffee bramley apple pudding is the ultimate autumn treat - a delicious blend of rich toffee and sweet apples. Pair it with vanilla ice cream or some warm custard for a cosy dessert. Perfect for family gatherings or a quiet night in.

Recipe serves: 8

Ingredients for pudding

250g salted butter
25g soft dark brown sugar
500g bramley cooking apples
4 eggs
250g self raising flour
2 tsp bicarbonate soda

Ingredients for sauce

800ml double cream
200g soft dark brown sugar
125g salted butter

1. Add butter and sugar to a bowl and beat together. Add the eggs, flour and bicarbonate soda and mix together.

2. Peel and grate the apple into the mix and fold together.

3. Line an 8 inch cake tin with parchment paper and then spoon in the mixture. Cook in the oven at 160 degrees for approximately 45 minutes. Once cooked, allow it to cool. 

4. To make the sauce, in a saucepan place the cream, butter and sugar. Set to a slow heat and stir continuously. Bring to the boil and then simmer gently. 

5. To serve, cut the pudding into 8 pieces. Reheat the pudding and pour over the sauce. Serve with vanilla ice cream or custard.
